It is a good thing that we have a free press in this country. And investigative journalists like Oisín Cantwell. Because without him, I would not have remembered that it was Våffeldagen yesterday. Waffle Day. So I had time, just after reading his tweet yesterday to make and eat three waffles. Normally I enjoy them with cloudberry jam, but sadly I was out, so strawberry jam had to do.

It's been ages since I've had waffles.
I have an old recipe from my school days. I must have been 12 years old when we learned to make waffles one day. I made some for my parents later, and everyone agreed that it was a success!
Apparently you still have the touch. Looks good. And whipped cream always helps, even if you have the wrong jam.
